Just now any restaurant re-opening is good news. On a recent visit to Chablis we discovered a new restaurant and wine bar/wine shop which is opening its doors for the first time.

Chabliswhynot has been set up by Fabien Espana in a large and central position in the main street. I had not seen it before and went in out of curiosity. When I discovered from Fabien that he had previously been the owner of Au Fil du Zin I became pretty attentive. Au Fil du Zinc has long for me been the best restaurant in Chablis, not least as a result of its wine list. Under Fabien the last page contained many better and older vintages from some of Chablis’ most famous producers. For good reason each table was restricted to one bottle.

Chabliswhynot will be a mix of wine shop below and a place to eat fairly casually while tasting excellent wines from Chablis and far beyond. An afternoon carrying out a vertical tasting of the iconic Rhone Chateau Rayas would be a wonderful if financially ruinous way to spend a day out from Chateau de la Motte.
